Amazing Zucchini Frittata recipe

Golden colour. Interesting flavour. Pure perfection. It is a zucchini frittata. Not to mention, it is very healthy and simple to make. Take a look at the recipe and try it for your breakfast.


  • 3.5 cups milk
  • 1 cup corn grits
  • 4 eggs
  • 90g cheese, grated
  • 0.5 teaspoons salt
  • 0.3 teaspoons black pepper
  • 1 large zucchini, cut with a spiral vegetable cutter or with a vegetable peeler.
  • 100g smoked bacon, strips
  • 200g cherry tomatoes
  • 1 tablespoon olive oil


Preheat the oven to 220 degrees Celsius.

In a pot, bring the milk to a boil. Add the corn grits to a heat proofbowl. Cover the corn grits with the boiling milk. Pour the milk gradually while whisking the grits.

Whisk in the eggs and 45g of grated cheese. Sprinkle with salt and black pepper. Stir everything well. Add the zucchini and stir.

Transfer the mass to a large deep skillet or a baking dish. Top with the bacon slices, tomatoes. Sprinkle with the remaining grated cheese. Drizzle with the olive oil.

Cook in the oven for 15 minutes or until the top of the frittata browns nicely.
