Georgian Kharcho Soup recipe

Kharcho is a traditional Georgian soup that usually contains beef, rice, walnut and cherry plum puree. This time we will use lamb instead of beef.


  • 2kg lamb ribs (trimmed of fat), for lamb stew
  • 2 onions, 1 unpeeled for lamb stew and 1 cut in cubes for soup
  • 1 carrot, cut in few pieces, for lamb stew
  • 3 stalks celery, for lamb stew
  • 2 bay leaves, for lamb stew
  • 2 teaspoons salt, 1 for lamb stew and 1 for soup
  • 1 teaspoon black pepper, half of a teaspoon for stew and another half for soup
  • 7 cloves garlic, 3 for lamb stew and 4 finely chopped for soup
  • 2 tablespoons oil
  • 2 chili peppers, fresh or dried
  • 2 red peppers, cut in pieces
  • 1 can canned tomatoes, in their own juice
  • 2 tablespoons tomato paste
  • 1 cup chickpeas
  • 1 cup rice, washed and drained
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon cumin


Prepare the lamb stew. It is better to do it one day before in order for fat to come to the top and for you to remove that fat. Place lamb ribs to a big pot. Cover with water. Bring to a boil. Remove the water, rinse the ribs and cover with new water. Bring to a boil again. Remove the foam. Add all the vegetables (do not peel the onion, you will have more taste and colour), salt, black pepper, bay leaves. Cover with a lid and stew for about 2-6 hours (the longer the better). Remove the vegetables (throw them away) and ribs (set them aside). Leave the stew to stay throughout the night. Remove fat from the top of the stew in the morning.

In another pot, heat the oil, brown the onions until soft. Add garlic, chili pepper, cumin, coriander, paprika and cook for another few minutes.

Add the red peppers. Cook for 2 minutes, then add the tomatoes with all the juice and tomato paste. Cook for about 5-10 minutes. Add the chickpeas and pour heated lamb stew. Cook until chickpeas soften (about 30 minutes), addrice and cook for about 10 minutes, until rice is done.

In the end, add lamb ribs. Add salt and black pepper to taste. If you want, add few drops of lemon juice.

Serve with fresh coriander.
