Mexican Beef Fajitas recipe

At first, it seems as Beef Pajitas is a difficult meal to make because of the long list of ingredients. However, it is so simple, you will be wanting to make them every weekend or even more frequently. A variety of ingredients of your choice can go inside fajitas making it a very universal meal.   • 16 flour tortilla shells
  • 2kg beef
  • 3 red onions
  • 3 sweet red peppers
  • 3 sweet yellow peppers
  • 3 sweet green peppers
  • 4 cloves garlic
  • 2 lemons, juice
  • 100g olive oil
  • A pinch black pepper
  • 500g sour cream
  • 5g chipotle
  • 100g spinach
  • 100g arugula
  • Lettuce
  • Caraway


6-8 servings

Cut the beef in elongated strips.

In a bowl, combine chopped garlic, chipotle, black pepper, salt, caraway, lemon juice and olive oil.

Place the peppers in a cold water. Bring to a boil. When peppers are cooled down, cut them in thin strips.

In a skillet, heat some olive oil. Put the beef strips in the skillet and cook over a medium heat for about 4 minutes until no longer pink. Add sliced onion and peppers. Pour in the lemon juice marinade. Cook while stirring for about 5 minutes.

Place some cheese on tortillas. Warm them in the oven for about 30 seconds or until cheese is melted. Add the lettuce, sour cream, dash of lemon juice and fried beef with peppers on all the tortillas.
