Orange Bread Caribbean Style recipe


Although, the bread came from always sunny and hot Caribbean region, there is nothing better than eating this citrusy bread on cold days.  

Ingredients

  • 1 cup finely chopped orange peel
  • 1 cup fresh orange juice
  • 2,5 cups sugar
  • 1 whisked egg
  • 3,5 cups flour
  • 1 cup milk
  • 0,5 tablespoons melted butter
  • 2 teaspoons baking powder
  • 1 pinch salt

Preparation

Boil orange peels in boiling orange juice until peels soften. Add 1,5 cup of sugar, cook while stirring over a low heat until the liquid gets viscous (like syrup). Let it cool down.

Combine egg, 1 cup of sugar, butter and milk together.

Combine flour with baking powder and salt.

Place both mixtures into a single bowl, pour orange syrup and stir everything.

Pour the mass in a big loaf pan. Cook it in the oven (preheated to 180C) for 40 minutes.

Eat still warm or cold.

Goes well with cream cheese.
