Quick Mexican Bean Salad recipe


Very colorful, a little spicy, quick to make and overall amazing salad with beans and corns. Mexican style!

Ingredients


  • 2 cans black beans
  • 1 can canned corn
  • 2 tomatoes
  • 1 pepper
  • 1 avocado
  • 1 onion (better red)
  • 1 handful cilantro
  • 1 tablespoon oil
  • 2 tablespoon lime juice
  • 1 pinch each: salt, pepper, chili powder

Preparation

Cut tomatoes, pepper and avocado into cubes. Mince onion and cilantro. Combine with rinsed and drained black beans, corn, oil and lime juice. Season with salt, black pepper and chili powder (you can add fresh, finely chopped chili pepper instead).

Serve with corn chips.
