Vegan Indian Pancakes recipe


Pancakes but not really. Well, you won’t use flour as the main ingredient for the batter. Instead, this recipe uses potatoes. However, they are still pancakes, we think. In addition, this recipe is completely vegan!

Ingredients

  • 1 onion
  • 4 potatoes
  • 180g frozen peas
  • 1 chili pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 2 tablespoons bread crumbs
  • 60g parsley (1 handful)
  • 4 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 8 tablespoons vegetable or canola oil (for frying)


Preparation

Boil potatoes in water and mash them. Add finely chopped onion, chili pepper, ginger, parsley, peas, cumin, flour, bread crumbs and salt to the potato mass. Mix well.

Heat a skillet and start cooking the pancakes. When a pancake is golden brown on the bottom, flip and fry on the otherside until it is golden brown as well. Repeat with the remaining potato mass until all the batter is used, adding up more oil when needed.

When the pancakes are cooked, place them on a paper towel to drain.
